CLW suggests 18-24 inches for flower but a lot of people use more for veg. I like a lot of light for veg and flower but whatever keeps your plants healthy is best.

I like 24/0 for veg but there is a lot of debate about lighting schedules.

I was using a 170W A51-90 fixture so far, which I am now happy to retire. Hopefully I can sell this quickly, even at a loss. I just want it out of here. Even at 36" the plants didn't like it because of the 80 degrees lenses the manufacturer used on their light.
One SS400W is installed. Here it is (I forgot to lower it before taking the pic. It's sitting at 18" now).
I'm starting with a single light for now because I want to make sure the cooling is sufficient and I don't need two SS400W in there for now. Or do I?

The good news is that the 1/10 hp chiller is more than enough for this light, but it won't suffice for two, so the bigger one will become useful.
I'll keep the 1/10 to chill my PC instead

I never heard of that light but I checked out the specs, you certainly upgraded. 
I'd even go with the 24", at this stage, lowering it to 18" as they get a little bigger. Yes, one is more than enough for 2 small plants in veg, you should get a pretty full screen...
The internodes look fine, just keep an on the basics, like beefxer suggested, and let them grow.

I have a quick question about inoculation: I see that some roots are amber colored (color oft he myco powder I had) while others are pure white... I imagine I will need to reuse the myco over and over until all roots look like that amber color?
I assume here the amber color is reflective of the microbial fauna on the roots (and not root rot... my DWC res temp has been at 68F from the very start.)

Root rot is usually brown and slimy. Roots can be stained, in many cases, without doing damage, I'd just follow the directions on the package and you'll have to add more every time you change the res. About that, once a week can be a bit of a waste, especially when they're small like they are. I'd suggest every two weeks until they start using more water but that is up to you. If you feel better doing it every week, you're not hurting your plants. There is no one single right way to grow...
